In Merlin Project on the Mac you will find the project templates in the start dialog, which you can open at any time via "File > New". More templates are available here.

Merlin Project on the iPhone or iPad offers the templates when you create a new document. Tap on the '+' symbol in the document list at the top right and then select 'New document ...' or one of the templates.
